Wheat has a history dating back to the Neolithic period and is an essential part of human culinary heritage. Its origin is in the Fertile Crescent of Mesopotamia, and it has been cultivated since the beginning of civilizations.

The wheat we use today traces its roots to the Karacadağ Mountain Region in Konya, the capital of the Seljuk Empire and one of humanity's first settlement areas. Archaeological work at the Neolithic city of Çatalhöyük has shown that bread-quality wheat was grown and consumed there as far back as 9,000 years ago. Emmer and Einkorn wheat, two of the classic eight founding crops of agriculture, have been widely used in this region for centuries.
