Cultivated lentil beds dating back to 8000 BCE were first discovered along the Euphrates River in northern Syria.

Evidence of lentil cultivation has been found in the lake dwellings of St. Peter's Island in Lake Biel, Switzerland, dating back to 3000 BCE. Lentils are mentioned in many historical narratives and sacred texts.

Lentil cultivation in India, which consumes approximately half of the global lentil production, dates back to around 2500 BCE. Today, more than 50 different varieties are grown.

Lentils only reached the Americas in the 16th century through Spanish and Portuguese explorers, becoming particularly popular in France.

Today, lentil varieties are widely grown throughout the Middle East, North Africa, and Mediterranean coasts, as well as in areas as far north as Germany, Holland, and France.
